The book provides a systematic view on flammability and a collection of solved engineering problems in the fields of dilution and purge, mine gas safety, clean burning safety and gas suppression modeling. For the first time, fundamental principles of energy conservation are used to develop theoretical flammability diagrams and are then explored to understand various safety-related mixing problems. This provides the basis for a fully-analytical solution to any flammability problem. Instead of the traditional view that flammability is a fundamental material property, here flammability is discovered to be a result of the explosibility of air and the ignitability of fuel, or a process property. By exploring the more fundamental concepts of explosibility and ignitability, the safety targets of dilution and purge can be better defined and utilized for guiding safe operations in process safety. This book provides various engineering approaches to mixture flammability, benefiting not only the safety students, but also field operators, as a useful resource for the safe handling of flammable gases and liquids. It will be useful to anyone who worries about the ignition potential of a flammable mixture.

About a year ago I promised my friend Fischbein a preface to his book of which I knew the French manuscript. Now with the printer's proofs under my eyes I like the book even better than I did then, because of, and influenced by, new experiences in the meantime, and fresh thoughts that crossed my mind. Have I been influenced by what I remembered from the manuscript? If so, it must have happened unconsciously. But of course, what struck me in this work a year ago, struck a responsive chord in my own mind. In the past, mathematics teaching theory has strongly been influenced by a view on mathematics as a heap of concepts, and on learning mathematics as concepts attainment. Mathematics teaching practice has been jeopardised by this theoretical approach, which in its most dangerous form expresses itself as a radical atomism. To concepts attainment Fischbein opposes acquisition of intuitions. In my own publications I avoided the word "intuition" because of the variety of its meanings across languages. For some time I have used the term "constitution of mathematical objects", which I think means the same as Fischbein's "acquisition of intuitions" - indeed as I view it, constituting a mental object precedes its conceptualising, and under this viewpoint I tried to observe mathematical activities of young children.

''Sweetness from Starch'' describes methods adapted from those used in many cottage factories in Vietnam for making maltose syrup from cassava starch, using the enzymes in cereal seedlings. This technology produces a syrup containing about 60% maltose, 25% glucose and 15% of other sugars. Maltose is a type of sugar. As a sweetener, it can be used to replace all or part of the sugar used in making ice-creams, biscuits, jams, bread, infant foods and many confectioneries. It boosts the sweetness of sugar and imparts important advantages, including ''mouth feel'' to foods to which it is added. Maltose syrup is a stable product which can be stored for long periods and transported to distant customers. ''Sweetness from Starch'' gives a detailed description of what is needed to make maltose syrup in a cottage factory - both the equipment and the materials, and how to make. It ends by giving a number of recipes to indicate some of the many ways in which maltose can be used.
